Castrated animals. Nature: colder than non-castrated animals. Optimum: rams, then the one-year-old, castrated billy goat, then the calf; these are the grades of quality amongst castrated animals. Benefit: easy to digest. Harm: they loosen the stomach. Remedy for harm: with fruit juice or pomegranate wine. Effects: temperate blood. Most advisable for temperate and hot [temperaments], youth, in spring and in eastern [regions].
